Pistachio Cream Croissant – A Taste of Naples

Known by many visitors as one of the best pastries from Pistacchio Pane e Caffè, this croissant is the perfect expression of our philosophy: real Italian flavor, premium ingredients, and a deep love for pistachio.

Inspired by Neapolitan tradition and crafted with the same passion you’ll find in our Italian pastry shop in Miami, this recipe blends flaky layers, rich aroma, and our beloved pistachio crema — the green gold of our kitchen lab and the star of our pistachio specialties.

Today, we’re sharing a simplified home version so you can recreate a piece of Naples in your own oven.

Ingredients

For the Pistachio Cream

  • 150g pistachio paste (100% pure pistachio)
  • 250ml whole milk
  • 40g sugar
  • 20g cornstarch
  • 2 egg yolks
  • 20g butter
  • A pinch of vanilla (optional)

For the Croissants

  • 6 high-quality butter croissants (store-bought or homemade)
  • Pistachio granella (crushed pistachios) for topping
  • Powdered sugar (optional)

Instructions

1. Make the Pistachio Cream (Crema al Pistacchio)

  1. In a bowl, whisk the egg yolks, sugar, and cornstarch until smooth.
  2. Warm the milk in a saucepan over medium heat until it begins to steam.
  3. Slowly pour the warm milk into the yolk mixture while whisking constantly.
  4. Return the mixture to the saucepan and cook on low heat, stirring until it thickens.
  5. Remove from heat and mix in the butter and pistachio paste until fully combined.
  6. Let the cream cool completely, then refrigerate for at least 1 hour.

2. Prepare the Croissants

  1. Preheat your oven to 170°C (338°F).
  2. Warm the croissants in the oven for 3–5 minutes to lightly crisp the exterior.
  3. Remove from the oven and let them cool slightly.

3. Fill the Croissants

  1. Transfer the pistachio cream into a piping bag.
  2. Insert the tip into the base or side of the croissant and gently fill until the pastry feels slightly heavier.
  3. Pipe a little extra cream on top for decoration.

4. Finish and Serve

  1. Sprinkle crushed pistachios over the cream.
  2. Add a dusting of powdered sugar if desired.
  3. Serve warm — the Neapolitan way.
